The area of food toxicology currently has a high profile of interest in the food industry, universities, and government agencies, and is certainly of great concern to consumers. There are many books which cover selected toxins in foods (such as plant toxins, mycotoxins, pesticides, or heavy metals), but this book represents the first pedagogic treatment of the entire range of toxic compounds found naturally in foods or introduced by industrial contamination or food processing methods. Featuring coverage of areas of vital concern to consumers, such as toxicological implications of food adulteration (as seen in ethylene glycol in wines or the Spanish olive oil disaster) or pesticide residues, Introduction to Food Toxicology will be of interest to students in toxicology, environmental studies, and dietetics as well as anyone interested in food sources and public health issues.
The number of students who are interested in toxicology has increased dramatically in the past several years. Issues related to toxic materials have received more and more attention from the public. The issues and potential problems are reported almost daily by the mass media, including television, newspapers, and magazines. Major misunderstandings and confusion raised by those reports are generally due to lack of basic knowledge about toxicology among consumers. This textbook provides the basic principles of food toxicology in order to help the general public better understand the real problems of toxic materials in foods.

The nature of food is responsible for the uniqueness of food toxicology. Food contains hundreds of thousands of substances that have not been fully characterized or tested. Food cannot be commercially produced in a definable environment under strict quality controls and thus cannot meet the rigorous standards of chemical identity, purity,. Book Description. Following in the tradition of the popular first edition, Principles of Food Toxicology, Second Edition integrates the general principles of toxicology with a systematic characterization of the most important food-borne toxicants. Ideal as a textbook in a food toxicology course, and also as a monograph dealing with principles of food toxicology as the whole, and, due to. Title: FOOD TOXICOLOGY 1 FOOD TOXICOLOGY. ENVS 531; Sunitha Yerragodula; 2 Uniqueness of food toxicology. Nature of food makes it unique; Food is subjected to unpredictable forces of nature and hence unreliable. Assessment of safety of substances added to food, natural substances in food, Safe is a term which is most used in food toxicology. The field, which has evolved from food science, food safety, pesticide chemistry, and toxicology, represents a broad area requiring a strong scientific base in physical, chemical, mathematical, and biological sciences and an appreciation for food chemistry, natural products, analytical chemistry, pharmacokinetics, risk assessment, and some. COURSE GOALS: Food toxicology is concerned with assessing the injurious effects on living systems of chemicals present in foods. The chemical agents can be man-made (e.g., pesticide residues, food additives, contaminants originating with processing machinery, or packaging materials) or of natural origin (e.g., microbial, animal or plant toxins). They can, also be generated in the course of preparing, processing, and preserving foods (e.g., mutagens and carcinogens). It is important that students of food science as well as environmental toxicology are familiar with the basic chemical and biological aspects of the injurious substances present in foods. This course wishes to develop an understanding of the chemical and biological principles that determine toxicity and, by presenting typical examples of the toxic substances found in foods, it hopes to let students become familiar with their properties, modes of action, and methods of analysis.
